Stuffed Sweet Potatoes

Serves: 4
Elevated baked sweet potatoes stuffed with taco filling and topped with Spicy Cotija Cheese.

INGREDIENTS:

  • 4 Sweet Potatoes
  • 15 oz can of black beans
  • 1 bag of frozen roasted corn
  • ½ cup diced yellow onion
  • Rizo Bros. Spicy Cojita Cheese
  • 3 green onions
  • 2 tbsp taco seasoning
  • ½ cup pickled red onion (optional)
  • 1 jalapeno (sliced)
  • Sour cream (optional)
  • Cilantro
  • Salt and Pepper

PREPARATION:

  1. Cut Sweet Potatoes in half
  2. Season with Salt, Pepper and Olive Oil
  3. Bake Sweet Potatoes at 400 degrees for approximately 40 mins, or until tender
  4. Sautee black beans, corn and yellow onion with taco seasoning and a bit of olive oil until heated through
  5. Top Sweet Potatoes with black bean mixture
  6. Garnish with pickled red onion (optional), jalapeno, sour cream, cilantro and Spicy Cojita Cheese
