Greek Salad with Queso Fresco

Serves:
Fresh Greek salad with sweet honey and Kalamata olives, topped with fresh Mexican Crumbling Cheese.

INGREDIENTS:

  • 1 head red romaine lettuce
  • 1 puck Rizo Bros Queso Fresco, crumbled
  • 1/2 cup olive oil
  • 1/4 cup honey
  • 2 tbsp dried oregano
  • 1 lime, zested and juiced
  • 1 tsp cumin
  • 1/4 cup Kalamata olives, pitted and halved
  • 1 small red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 2 tbsp balsamic glaze
  • salt and pepper

PREPARATION:

  1. Chop head of red romaine lettuce
  2. Combine olive oil, honey, and zest/juice of lime with salt and pepper, cumin, and oregano
  3. Toss lettuce with prepared honey lime dressing
  4. Top salad with Queso Fresco, olives, cilantro, and onions
  5. Drizzle with balsamic glaze
